East meets West: A culinary fest of two master chefs

Crowne Plaza Manila Galleria and Holiday Inn & Suites Manila Galleria opened its doors to two culinary leaders who will elevate the hotels’ dining experiences to new heights: Chef David Chu Wai Fung, the Chinese Executive Chef of Xin Tian Di, and Chef Luca Angioletti, the new Executive Chef overseeing both properties.

Hailing from Hong Kong with over 30 years of culinary expertise, Chef David has taken the helm at Xin Tian Di, Crowne Plaza Manila Galleria’s celebrated Chinese restaurant.

His career journey, which began in 1987 at Tai Po Treasure Restaurant, includes leadership roles at Gloria Maris and Nouveau Classic Restaurant, showcasing his mastery of traditional Chinese dishes and innovative techniques.

“My dishes reflect authentic homestyle dishes that are familiar and comforting,” Chef David said.

Chef David has helped strengthen Xin Tian Di’s reputation as a premier destination for Chinese cuisine in Metro Manila.

Fluent in Cantonese, Mandarin, English, and Tagalog, he brings not only culinary expertise but also cultural depth, ensuring every dish is a harmonious blend of authenticity and creativity.

Joining the two IHG properties as the new Executive Chef, Chef Luca Angioletti brings over three decades of international experience, having worked in Michelin-starred restaurants in Italy and prestigious hotels across the globe. His culinary leadership spans luxury properties in and out of the country.

Chef Luca is celebrated for his innovative approach to menu creation, sustainable practices, and team mentorship.

His expertise in international cuisine, combined with a flair for blending tradition and modernity, promises to offer guests an elevated gastronomic journey.

“People are more knowledgeable now — they want to discover new dishes,” Chef Luca said.

“We are doing this the sustainable way by connecting with local producers, local farmers,” he added.

With a philosophy centered on guest satisfaction and continuous learning, Chef Luca aims to make the dining outlets of Crowne Plaza and Holiday Inn the top destinations for culinary experiences in Ortigas.
